  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, rough chopped
  • 4 ounces goat cheese
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 400ºF and prepare a baking sheet with parchment paper.
  2. Roll out puff pastry to about ⅛ inch thick and cut into 16 circles.
  3. Dock each circle using a smaller cutter and brush lightly with egg wash.
  4. Fill each pastry with a heaping teaspoon of caramelized onions.
  5. Chill slightly, then add pieces of goat cheese on top and pipe in fig jam.
  6. Bake for 12 minutes until puffed, then return to oven for an additional 5-8 minutes until golden brown.
  7. Cool slightly, garnish with fresh thyme, and serve warm.
