  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil (as needed)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 180°C/356°F. Slice the garlic bulb tip, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until caramelized. Cool slightly, then squeeze garlic into a bowl.
  2. Peel and chop potatoes into large chunks, boil in salted water until tender (15-20 minutes). Drain and let steam dry for about 5 minutes.
  3. Return potatoes to pot; add roasted garlic, butter, cream, and mash until smooth. Stir in Parmesan cheese, season with salt and pepper, then mix in egg yolks one at a time.
  4. Transfer the mixture to a piping bag fitted with a star tip. Pipe swirls onto a baking tray lined with parchment paper.
  5. Drizzle melted butter over each swirl and bake at 200°C/400°F for 15-20 minutes until golden brown.
