  • 16 ounces small button mushrooms
  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon chili flakes (to taste)
  • 4 tablespoons butter (divided)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Brush mushrooms clean and trim any dried-out stems. If large, cut them in half.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until browned, about 3–5 minutes.
  3. Add 2 tablespoons of butter, minced onions, and garlic; sauté until lightly caramelized, about 3–5 minutes.
  4. Pour in chicken stock or white grape juice along with lemon zest, juice, and chili flakes. Simmer for 2 minutes until liquid reduces slightly.
  5. Stir in the remaining butter and chopped parsley; cook for an additional minute. Season with salt and pepper before serving.
