  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • 1 tsp Sugar
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Garlic Powder
  • 1 tbsp Smoked Paprika
  • 1/2 tsp Nutmeg
  • Fresh Parsley (chopped)
  • 2 tsp Oregano

Instructions

  1. Thinly slice the onions. Heat olive oil in a skillet over medium heat; sauté onions for 30–40 minutes until caramelized. Add sugar to enhance sweetness.
  2. If onions stick, add beef broth and simmer for an additional 10 minutes.
  3. In the same skillet, melt butter over low-medium heat; whisk in flour followed by heavy cream until thickened.
  4. Mix two-thirds of the caramelized onions into the béchamel sauce along with seasoning and grated Parmesan.
  5. Boil cavatappi until just under al dente; drain.
  6. Combine cooked pasta with béchamel sauce until well-coated.
  7. Transfer to a baking dish, top with remaining onions and breadcrumbs. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
