  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup beef broth (or vegetable broth)
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Olive Oil
  • 1/2 Baguette (for homemade breadcrumbs)
  • Fresh Parsley (for garnish)

Instructions

  1. Slice onions into long strips and caramelize them in olive oil over medium heat for 30–40 minutes until golden.
  2. In the same skillet, make the béchamel sauce by whisking flour into melted butter, then add heavy cream gradually until smooth.
  3. Stir in two-thirds of the caramelized onions into the sauce along with salt, pepper, parsley, and Parmesan cheese.
  4. Cook cavatappi in salted water until just shy of al dente; drain and mix with the sauce.
  5. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden brown.
  6. Serve hot, garnished with fresh parsley.
