  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • ½ cup fresh orange juice

Instructions

  1. Rinse and simmer the oranges in water for an hour to soften. Drain and blend until smooth.
  2. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a bowl, mix the blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract until smooth.
  4. Pour the batter into the prepared pan and bake for about an hour or until a toothpick comes out clean.
  5. For the glaze, combine honey and orange juice over medium heat until reduced by half. Brush this glaze over the warm cake once baked.
