  • 12 to 18 pound turkey (fully thawed)
  • 1 onion (peeled and quartered)
  • 1 lemon (quartered)
  • 1 to 2 sprigs fresh rosemary
  • 1 to 2 sprigs fresh thyme
  • 1 to 2 sprigs fresh sage
  • kosher salt and black pepper
  • ¾ cup unsalted butter (room temperature)
  • 6 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme
  • 3 celery ribs (roughly chopped)
  • 2 carrots (roughly chopped)

Instructions

  1. Bring your fully thawed turkey to room temperature by removing it from the fridge about an hour before cooking.
  2. Preheat your oven to 325°F (160°C) and pat the turkey dry with paper towels.
  3. Season the cavity generously with salt and pepper; fill it with onion, lemon, and fresh herbs.
  4. Mix softened butter with minced garlic, salt, pepper, rosemary, and thyme.
  5. Rub one-third of the herb butter under the skin of the breast and spread the rest over the outside of the turkey.
  6. Place on a roasting rack or atop chopped vegetables in a roasting pan.
  7. Roast for approximately 15 minutes per pound until internal temperature reaches 158°-160°F.
  8. Let rest for at least 30 minutes before carving.
