  • Salt and pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)
  • Fresh herbs for stuffing (sage, thyme, rosemary)
  • 1 head garlic (cloves peeled)

Instructions

  1. Remove the turkey from the fridge about an hour before roasting to bring it closer to room temperature.
  2. In a bowl, combine softened butter with sage, thyme, rosemary, minced garlic, salt, and pepper until well blended.
  3. Preheat your oven to 450°F and prepare a rack in the bottom third of the oven.
  4. Pat the turkey dry with paper towels; season generously with salt and pepper inside and out. Stuff it with lemon halves, fresh herbs, and peeled garlic cloves.
  5. Rub the herb butter over the turkey’s skin and tuck in the wings.
  6. Place the turkey breast-side up on a rack in a roasting pan; reduce oven temperature to 350°F immediately.
  7. Roast for about 13 minutes per pound until an internal thermometer reads 165°F in the thigh.
  8. Let the turkey rest for at least 20 minutes before carving.
