  • 1/4 cup sour cream

  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Grill fresh corn until lightly charred; let cool before cutting off kernels. If using frozen corn, thaw and drain.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooled pasta, corn kernels, cheese, cilantro, and green onion to the dressing; toss gently to combine.
