  • 1/2 English cucumber (cut into quarters lengthwise and sliced)
  • 3 cups halved cherry tomatoes
  • 8 oz fresh mozzarella balls (or 1 cup diced fresh mozzarella)
  • 1 large diced avocado
  • 1/3 cup chopped basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (peeled and either pressed or grated)
  • Salt and pepper to taste

Instructions

  1. Slice the cucumber into quarters lengthwise, then cut into thin slices. Halve the cherry tomatoes and chop the basil.
  2. In a large bowl, combine sliced cucumbers, cherry tomatoes, diced avocado, mozzarella, and basil. Gently toss to combine.
  3. For the dressing, whisk together olive oil, balsamic vinegar, pressed garlic, salt, and pepper in a small bowl.
