  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350°F and grease your baking pan.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, vanilla extract, milk, and vegetable oil; whisk until combined.
  4. Stir in hot coffee until smooth.
  5. Pour batter into the pan and bake for about 25 minutes or until a toothpick comes out clean. Cool for 10–15 minutes.
  6. Toast chopped kataifi with butter over medium heat until golden brown.
  7. Combine toasted kataifi with pistachio cream in a bowl.
  8. For ganache: Microwave chocolate with heavy cream for about 45 seconds; whisk until smooth.
  9. Spread pistachio mixture over cooled cake and pour ganache on top.
  10. Serve warm or chilled.
