  • 5 ½ oz white chocolate
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry
  • 9 oz milk chocolate
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tbsp vegetable oil
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp butter
  • 1 cup water

Instructions

  1. In a bowl, mix flour, cornstarch, sugar, and salt. Combine with vegetable oil and water until smooth. Let rest.
  2. Heat a nonstick pan over medium-low heat. Pipe thin strands of the batter onto the hot surface and cook for about 30–45 seconds until set.
  3. Melt white chocolate with double cream in short intervals until smooth. Blend ground pistachios with salt and mix into the melted chocolate.
  4. Toast kataifi strands in a non-stick pan with butter until golden brown. Mix toasted kataifi into the pistachio cream and chill.
  5. Once firm, scoop portions and roll into balls.
  6. Melt milk chocolate, dip each ball to coat, then garnish with chopped pistachios.
  7. Refrigerate until set before serving.
