  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour (or gluten-free substitute)
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 2-quart baking dish.
  2. Layer thinly sliced potatoes and onion in the dish.
  3. In a saucepan, melt butter over medium heat, whisk in flour until smooth, then gradually add almond milk while stirring. Simmer until creamy.
  4. Remove from heat; stir in cheddar cheese, garlic powder, salt, and pepper until melted.
  5. Pour sauce over potato layers and cover with foil.
  6. Bake for 45 minutes. Remove foil, top with gruyere and parmesan, and bake for an additional 30–45 minutes until golden brown.
  7. Garnish with parsley before serving.
