  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the baking dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices and drizzle with the remaining mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil (and add cheese if desired) and bake uncovered for an additional 15–20 minutes until golden brown and crispy.
  7. Let cool for a few minutes before slicing.
