  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the baking dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices and drizzle with the rest of the mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil; if using cheese, sprinkle on top and bake uncovered for another 15-20 minutes until golden brown.
  7. Allow to cool slightly before slicing and serving.
