  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line two baking trays with parchment paper.
  2. Roll out the puff pastry sheets slightly and prick them with a fork.
  3. Bake for 35-45 minutes until golden brown; cool completely.
  4. Trim edges to fit snugly in an 8×8-inch square pan.
  5. In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks.
  6. Warm the milk in another saucepan until steaming, then temper by adding it slowly to the egg mixture.
  7. Cook over medium heat while whisking until thickened; stir in vanilla seeds and cold butter until smooth.
  8. Assemble by layering one pastry sheet at the bottom, pouring custard on top, and placing the second pastry sheet on top.
  9. Cover tightly and refrigerate for at least four hours or overnight before slicing.
