  • 1 ½ cups graham cracker crumbs
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for the crust)
  • ¾ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt; add melted butter and combine well.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared pan.
  4. In another bowl, beat cream cheese until smooth; gradually add sugar and eggs one at a time. Mix in lemon zest, juice, and vanilla until silky.
  5. Pour filling over crust; sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes or until center is set but slightly jiggly.
  7. Cool at room temperature for an hour before chilling in the fridge for at least three hours.
  8. Slice into squares and serve!
