  • 1/4 cup granulated sugar
  • 1/4 cup liquid-state coconut oil
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, both sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, and optional salt until well combined.
  3. Fold in the flour, baking powder, and baking soda gently until just mixed.
  4. In another bowl, blend the cream cheese with granulated sugar and flour until smooth.
  5. Pour two-thirds of the pumpkin batter into the pan, add the cream cheese mixture on top, then dollop the remaining batter over it.
  6. Bake for about 48 minutes or until golden brown with a toothpick inserted coming out clean.
  7. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
