- 6 cups vegetable stock (or chicken stock)
- 1 cup uncooked wild rice
- 8 ounces baby bella mushrooms, sliced
- 4 cloves garlic, minced
- 2 medium carrots, diced
- 2 ribs celery, diced
- 1 large sweet potato, peeled and diced
- 1 small white onion, peeled and diced
- 1 bay leaf
- 1 tablespoon Old Bay seasoning
- 14 ounces unsweetened coconut milk
- 2 large handfuls of kale, chopped
- In a large pot over medium heat, sauté minced garlic and diced onions in a splash of vegetable stock until fragrant.
- Add carrots, celery, mushrooms, sweet potato, and Old Bay seasoning; stir for about 5 minutes.
- Pour in vegetable stock and add wild rice and bay leaf. Bring to a boil then reduce heat to low; simmer uncovered for about 30-35 minutes.
- Stir in coconut milk and chopped kale until well combined.
- Season with salt and pepper to taste before serving.
