  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  5. Alternate adding dry ingredients and coconut milk to the mixture until smooth.
  6. Pour batter evenly into prepared pans and bake for 25–30 minutes. Let cool completely on wire racks.
  7. For frosting, beat cream cheese and powdered sugar until smooth; fold whipped heavy cream into the mixture.
  8. Assemble by layering cake with frosting in between; cover top and sides with remaining frosting and sprinkle with shredded coconut.
  9. Chill before serving.
