  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter, divided
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, render chopped bacon until browned; remove with a slotted spoon.
  3. Season beef with salt and pepper and sear in batches until browned on all sides.
  4. Sauté onions and carrots in remaining butter until softened; add garlic, tomato paste, and flour.
  5. Pour in apple vinegar and scrape up brown bits; stir in beef stock and Better than Bouillon.
  6. Return beef and bacon to the pot with thyme and bay leaves; cover and bake for about 2½ hours.
  7. Sauté mushrooms in remaining butter; add pearl onions for five minutes before incorporating into the stew.
  8. Bake for an additional 45–60 minutes until everything is fork-tender.
