  • 45 pound turkey breast (bone-in, skin-on)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion (quartered)
  • Lemon slices
  • Orange slices
  • 1/2 cup chicken broth

Instructions

  1. Prepare the herb butter by mixing softened butter with lemon zest, orange zest, rosemary, thyme, sage, minced garlic, salt, and pepper in a bowl.
  2. Loosen the turkey breast skin carefully and spread half of the herb butter underneath it while rubbing the rest over the outside.
  3. Place quartered onions and citrus slices in a roasting pan and position the turkey on top.
  4. Pour chicken broth around the turkey and cover loosely with foil. Roast in a preheated oven at 350°F (175°C) for about 1 hour and 40 minutes or until an internal temperature of 165°F (74°C) is reached.
  5. Allow the turkey to rest for about 15 minutes before slicing.
