  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and granulated sugar until smooth. Add eggs one at a time, mixing well.
  4. Alternate adding the flour mixture and milk to the butter mixture until just combined.
  5. Combine apples, light brown sugar, and cinnamon in a separate bowl.
  6. Layer half the batter into the loaf pan, followed by half the apple mixture; swirl gently.
  7. Repeat layers with remaining batter and apples, finishing with a sprinkle of cinnamon sugar.
  8. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  9. Cool for 15 minutes in the pan before transferring to a wire rack; drizzle with glaze.
