  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Pear
  • Pearl onions
  • Cherry tomatoes
  • Fresh rosemary sprigs
  • Plenty of olive oil (a few Tbs.)

Instructions

  1. In a large bowl, whisk together the bread flour, yeast, and coarse salt. Add warm water and stir until a shaggy dough forms.
  2. Cover and let the dough rest overnight at room temperature.
  3. The next day, drizzle olive oil in a casserole dish (approximately 7×12 inches) and gently transfer the risen dough into the dish.
  4. Dimple the dough with your fingers and drizzle more olive oil on top. Cover lightly and let it rise for another two hours.
  5. Preheat your oven to 400°F (200°C).
  6. Decorate the dough with rosemary sprigs, sliced pear, halved cherry tomatoes, and pearl onions.
  7. Sprinkle with coarse salt and bake for about 25 minutes until golden brown.
  8. Allow to cool slightly before slicing and serving.
