  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1â…“ cups mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix vanilla wafer crumbs and brown sugar; add melted butter and combine well. Press the mixture firmly into a pie dish and bake for about 10 minutes.
  2. In another bowl, beat together mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Fold in ricotta cheese until well blended.
  3. Whip the heavy cream in a separate bowl until soft peaks form. Gently fold into the cheese mixture.
  4. Spread half of the filling into the baked crust, sprinkle with one-third of the chocolate chips, then layer with remaining filling and top with more chocolate chips.
  5. Cover with plastic wrap and refrigerate for at least 8 hours before serving.
