  • 2 cans chickpeas (15 ounces each)
  • 1 ripe avocado
  • 4 large tortillas or wraps
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 1 tablespoon chili sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • Juice of 1/2 lime
  • 2 tablespoons water (or more, to desired consistency)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
  2. In a large bowl, combine rinsed chickpeas with diced red onion, chopped cilantro, lime juice, olive oil, chili sauce, additional spices, and salt.
  3. Mash the avocado in a separate bowl, mixing in yogurt (or vegan alternative), lime juice, water for consistency, and salt.
