  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 oz package frozen spinach, thawed and squeezed dry
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 lb penne pasta
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package directions until al dente. Reserve about ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook until browned (5–7 minutes). Remove from skillet and set aside.
  3. Sauté the chopped onion in the same skillet for about 5 minutes; add minced garlic and cook for another minute.
  4. Stir in the thawed spinach and heat through for about 1–2 minutes.
  5. Add chicken broth and heavy cream; bring to a gentle simmer until slightly thickened.
  6. Mix in grated Parmesan cheese along with the cooked chicken and drained penne. If needed, add reserved pasta water to achieve desired creaminess.
  7. Serve immediately with extra Parmesan cheese on top.
