Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and vanilla extract until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in cherries carefully.
  5. For the topping, mix together flour, brown sugar, and cinnamon in a small bowl. Add diced butter and blend until crumbly.
  6. Fill muffin cups about two-thirds full with batter and sprinkle topping over each.
  7. Bake for 20–25 minutes until golden brown; check doneness with a toothpick.
  8. Cool for five minutes in the pan before transferring to a wire rack.
