  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Stir in chopped onion; cook until soft. Add minced garlic and cook for another minute.
  3. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for about three minutes.
  4. Lay tortillas flat and sprinkle cheese on one half of each. Spoon beef mixture over cheese; add more cheese before folding.
  5. Heat another skillet with butter or oil. Cook each folded quesadilla for 2-3 minutes per side until golden brown and crispy.
  6. Let cool briefly before slicing into wedges.
