Ingredients

Scale
  • 1 lb cheese tortellini (fresh or frozen)
  • 1 tbsp olive oil
  • 1 lb thinly sliced beef steak (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté sliced onions and green bell peppers until tender and caramelized (about 5-7 minutes).
  3. Push the vegetables to one side of the skillet and add the thinly sliced beef. Season with salt, pepper, and Italian seasoning; cook until browned but still tender (4-5 minutes).
  4. In a separate saucepan, melt butter over medium heat; whisk in flour until smooth. Gradually add milk while whisking continuously until thickened (about 5 minutes). Stir in shredded provolone cheese until melted; season with salt and pepper.
  5. Combine the cooked tortellini with the beef and vegetables in the skillet, then pour the creamy sauce over everything. Toss gently until well-coated.
