  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 2 egg yolks
  • 200 grams mozzarella cheese

Instructions

  1. Roast the garlic: Cut the top off a garlic head, drizzle with olive oil, sprinkle with salt, cover in foil, and roast at 160°C (320°F) for about two hours.
  2. Prepare garlic butter by mixing roasted garlic with softened butter, chopped parsley, and two tablespoons of garlic oil.
  3. Proof the yeast by mixing warm milk with active dry yeast and honey; let sit until frothy.
  4. Combine all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and the yeast mixture in a bowl.
  5. Knead the dough for 15–20 minutes until soft and smooth.
  6. Let the dough rise in a warm spot for about 1.5 hours until doubled in size.
  7. Roll out the dough to about 1/4 cm thickness and spread the garlic butter over it.
  8. Sprinkle mozzarella cheese generously on top; roll up tightly and cut into six pieces.
  9. Let rolls proof on a baking sheet for another 30 minutes before baking.
  10. Preheat oven to 175°C (350°F) and bake for 20–25 minutes until golden brown.
