  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches, thinly sliced
  • Fresh parsley (for garnish)

Instructions

  1. Combine peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, pepper, and red pepper flakes in a bowl.
  2. Reserve half the marinade for later. Marinate salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat oven to 375°F (190°C). Heat oil in an oven-safe skillet over medium-high heat.
  4. Sear marinated salmon skin-side up for 2-3 minutes until golden brown.
  5. Flip salmon skin-side down; add peach slices around it.
  6. Pour reserved marinade over salmon and peaches.
  7. Bake for 12-15 minutes until salmon is cooked through (145°F internal temperature).
  8. Serve immediately, garnished with parsley.
