  • 4 packages cream cheese (8 ounces each)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs
  • ½ cup rainbow jimmies
  • 68 ounces whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla extract. Add eggs one at a time, mixing gently.
  3. Fold in rainbow jimmies and pour the mixture over the crust.
  4. Bake for about 60 minutes until the edges are set but center is slightly jiggly. Cool in the oven with the door ajar for an hour.
  5. Refrigerate for at least 4 hours before serving. Top with whipped cream and more jimmies if desired.
