  • 1 ¼ cups granulated sugar

  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies
  • Whipped cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined; press into the bottom of the pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
  4. Incorporate sour cream and vanilla extract before adding eggs one at a time.
  5. Gently fold in rainbow jimmies.
  6. Pour filling over the crust and bake for about 60 minutes until set around the edges but slightly jiggly in the center.
  7. Cool in the oven with door ajar for an hour, then refrigerate for at least four hours or overnight before serving with whipped cream.
