  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)
  • Oil spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, combine cooking oil, eggs, sugar, vanilla extract, and pumpkin puree; mix well.
  4. Gradually add dry ingredients to wet mixture; stir gently until just combined.
  5. Spray an 8” x 4” x 3” loaf pan with oil spray. Pour batter into the pan and sprinkle additional chocolate chips on top.
  6. Bake for about 50-60 minutes or until a toothpick comes out clean.
