  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and season them with salt and pepper before placing them in a baking dish.
  3. Mix softened cream cheese and heavy cream in a bowl until smooth; then fold in minced garlic, onion powder, paprika, Italian seasoning, Parmesan cheese, and half of the mozzarella.
  4. Spread the mixture over the chicken fillets and top with chopped sun-dried tomatoes.
  5. Cover with foil and bake for about 20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove foil, stir in chopped spinach, and sprinkle remaining mozzarella on top.
  7. Bake uncovered for an additional 10 minutes until the cheese is melted and bubbly.
