  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste; cook for an additional minute.
  4. Deglaze with a splash of beef broth, scraping up any browned bits.
  5. Return beef to the pot and add remaining broth along with carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, salt, and pepper. Bring to a boil then reduce to low heat.
  7. Cover and simmer for about 2 hours or until the beef is tender.
