  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes in batches until browned on all sides; remove and set aside.
  2. In the same pot, sauté onion and garlic for 3–4 minutes until translucent.
  3. Stir in tomato paste and cook for an additional minute.
  4. Deglaze the pot with a splash of beef broth.
  5. Return beef to the pot; add remaining broth along with carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil then reduce heat to low. Simmer covered for about 2 hours until beef is fork-tender.
  8. Adjust seasoning before serving and garnish with fresh parsley.
