- 3–4 lbs organic chicken (drumsticks and thighs work well)
- 2 tablespoons Jamaican curry powder
- 1 can (14 oz) full-fat coconut milk
- 2 medium russet potatoes, peeled and cubed
- 2 medium carrots, chopped
- 1–3 scotch bonnet peppers (adjust for spice level)
- 1 cup organic chicken stock (low-sodium)
- 2–3 tablespoons Jamaican Green Seasoning
- 2 teaspoons On Everything All-Purpose Blend
- 1 teaspoon sea salt
- 1/2 teaspoon smoked paprika
- 4 tablespoons extra virgin olive oil
- 2 tablespoons organic brown sugar
- 1 medium bell pepper, cored and chopped
- 3 garlic cloves, minced
- 2 teaspoons minced fresh ginger (or 1/2 teaspoon ground ginger)
- 2 green onions, lightly crushed or chopped
- 2 fresh thyme sprigs
- 1 tablespoon Jamaican pepper sauce
- 1 teaspoon ground allspice
- Sea salt + black pepper, to taste
- Marinate the chicken with Jamaican green seasoning, curry powder, sea salt, and all-purpose blend. Let sit for at least 30 minutes.
- Sauté garlic, ginger, and bell pepper in olive oil until fragrant.
- Add marinated chicken to the pot and brown on all sides.
- Pour in coconut milk and chicken stock; stir in brown sugar and spices.
- Add potatoes, carrots, scotch bonnet peppers, thyme, salt, and pepper.
- Simmer covered for about 40 minutes until the chicken is tender.
- Serve hot with rice or flatbread.
