  • 34 lbs organic chicken (drumsticks and thighs work well)
  • 2 tablespoons Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, chopped
  • 13 scotch bonnet peppers (adjust for spice level)
  • 1 cup organic chicken stock (low-sodium)
  • 23 tablespoons Jamaican Green Seasoning
  • 2 teaspoons On Everything All-Purpose Blend
  • 1 teaspoon sea salt
  • 1/2 teaspoon smoked paprika
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons organic brown sugar
  • 1 medium bell pepper, cored and chopped
  • 3 garlic cloves, minced
  • 2 teaspoons minced fresh ginger (or 1/2 teaspoon ground ginger)
  • 2 green onions, lightly crushed or chopped
  • 2 fresh thyme sprigs
  • 1 tablespoon Jamaican pepper sauce
  • 1 teaspoon ground allspice
  • Sea salt + black pepper, to taste

Instructions

  1. Marinate the chicken with Jamaican green seasoning, curry powder, sea salt, and all-purpose blend. Let sit for at least 30 minutes.
  2. Sauté garlic, ginger, and bell pepper in olive oil until fragrant.
  3. Add marinated chicken to the pot and brown on all sides.
  4. Pour in coconut milk and chicken stock; stir in brown sugar and spices.
  5. Add potatoes, carrots, scotch bonnet peppers, thyme, salt, and pepper.
  6. Simmer covered for about 40 minutes until the chicken is tender.
  7. Serve hot with rice or flatbread.
