  • 23 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 1 (14 oz.) can full-fat coconut milk
  • 2 medium russet potatoes, peeled + cubed
  • 1 medium bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 cup organic chicken stock (low-sodium)
  • 13 scotch bonnet peppers (adjust for spice level)

Instructions

  1. Marinate chicken with Jamaican Green Seasoning and curry powder; let sit while preparing other ingredients.
  2. Heat olive oil in a large pot over medium heat. Sauté garlic and ginger until fragrant.
  3. Add marinated chicken to the pot; brown on all sides.
  4. Pour in coconut milk and chicken stock, stirring to combine.
  5. Add potatoes, bell pepper, scotch bonnet peppers, thyme sprigs, and seasonings; cover and simmer for about 30 minutes until tender.
