  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (to taste)
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a saucepan, simmer chopped apricots, water, and sugar until tender. Stir in lemon juice and set aside.
  2. Preheat oven to 375°F (190°C). Grease a baking pan.
  3. Mix flour, sugar, baking powder, and salt in a bowl. Blend in cold butter until crumbly. Add egg and mix gently.
  4. Press half the dough into the pan, spread apricot filling on top, then crumble remaining dough over it.
  5. Bake for 30-35 minutes until golden brown. Cool completely before cutting into bars.
