  • 4 small or 3 large red gala apples (diced)
  • 1 1/2 tbsp granulated sugar
  • 120 g all-purpose flour
  • 200 g dark brown sugar
  • 2 1/4 tsp baking powder
  • 1/2 tsp ground cinnamon
  • ½ tsp salt
  • 125 g butter (room temperature)
  • 225 g granulated sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (room temperature)
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar
  • 1 tbsp maple syrup
  • 1 tsp sour cream
  • 1/2 tsp vanilla extract
  • 12 tsp water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Dice apples, mix with sugar and cinnamon; set aside.
  3. Combine flour, brown sugar, and cinnamon for topping; cut in butter until crumbly.
  4. In a bowl, mix dry ingredients for the cake. In another bowl, beat butter and sugar until fluffy; add eggs, sour cream, oil, and vanilla.
  5. Gradually combine dry ingredients with the wet mixture; fold in apples.
  6. Layer half the batter in the pan, sprinkle half the topping, add remaining batter and finish with topping.
  7. Bake for about 70 minutes or until a toothpick comes out clean.
  8. Prepare glaze by whisking powdered sugar with maple syrup, sour cream, and water to desired consistency; drizzle over cooled cake.
