  • 2 pounds small new potatoes (Yukon Gold or red bliss)
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes thoroughly and cut larger ones into halves or quarters.
  2. Place potatoes in a large pot with cold water, add salt, boil, then simmer until tender (15-20 minutes).
  3. Drain and cool the potatoes slightly.
  4. While cooling, whisk together olive oil, lemon juice, vinegar, mustard, garlic, salt, and pepper for the dressing.
  5. In a large bowl, combine cooled potatoes with olives, feta cheese, parsley, and dill.
  6. Pour dressing over the mixture and toss gently to coat.
